As Callahan looked to expand his flavors beyond his original Habanero recipe, he did what he knew best: looked to the road less traveled. He knew there were many great green sauces out there. However, none that sir Callahan had tried had the wonderful green, vegetal flavor of the poblano which is traditionally used in Chile Relleno. And so, he settled on the Poblano pepper and came up with another killer and versatile sauce with less heat.
