Ghee is clarified butter. In other words, it's butter that has been simmered and slightly caramelized at a low heat before it is strained and returned to a solid. The result is a nuttier, more concentrated butter with less water, making it shelf stable and endowing it with a higher smoke point. All good things.
As for its health properties, where do we start? First, the clarifying process removes casein and lactose, making ghee suitable for the dairy-sensitive. Traditionally speaking, ghee appears often in Ayurveda tradition, where it's used for its anti-inflammatory, digestive, and therapeutic effects. And finally, if we're getting down to the science, Ghee is high in Omega-3s and a short-chain fatty acid (butyric acid) thought to be good for your gastro tract.
