Here at Stocked, we want to share the general story of not only the products that we sell, but the ways in which we use them. In addition, we want to tell the stories of the people and businesses who inspire us.
For the first of what will be many posts here on Stocked about cheese & charcuterie boards, these pairings were inspired by Cathy of The Cheese Board Collective in Berkeley. This co-op has a rich history, starting as a small cheese store in 1967. Today, the cheese store and bakery offers almost 400 types of cheese! They also have a pizzeria just a few doors down.
For this cheese board, we're focusing on Mustard and Co.'s flagship mustard; honey curry. This bold mustard is the perfect combination of mustard seed, EVOO, balsamic vinegar, raw Washington state honey, curry spice, and sea salt.
We're also utilizing Georgetown Pantry Supply's raw honeycomb- though this particular honeycomb is only available in select stores in Seattle, you can find honeycomb alike at many specialty food and cheese shops around the nation.
We asked Cathy what cheese she would pair with Mustard and Co.'s honey curry mustard, and she said that her favorite is Leyden. Leyden is a gouda-style cheese with cumin seeds; made mostly in Holland, but can also be found made here in the States.
We also decided to put some blue cheese on our plate. Also bold like the Leyden, but very contrasting. We think that blue cheese goes great with honey.
Add salami and thinly sliced baguette and voila- we have ourselves a lovely and crowd pleasing cheese board.
